Sebi's Kitchen brings the soul of Polish, German, and Ukrainian cuisine to Seattle, offering an authentic European experience filled with warmth, family, and tradition.
Founded by Chef Kamila Kanczugowski, Sebi’s Kitchen is a love letter to her heritage, expressed through dishes that celebrate simplicity and deep-rooted flavors. The name “Sebi’s Kitchen” honors her older son, Sebi, who inspired the venture. Her younger son, Daniel, was her right-hand man for many years, lending a hand in the kitchen, tasting dishes, and helping her dream up new menu items.
Chef Kamila’s journey to Seattle was marked by a series of life-changing moves. Escaping Soviet-era Poland, she began her culinary path in Italy before making her way to the Pacific Northwest. With her husband and young family by her side, Kamila earned a culinary degree from Edmonds College and soon found herself immersed in Seattle’s Polish community, sharing her passion for food.
At Sebi’s Kitchen, dishes are crafted with care and an unwavering commitment to tradition. From hearty potato dumplings (pyzy) glistening with butter and sprinkled with bacon to her signature pork cutlets (kotlet mielony), Chef Kamila infuses each bite with flavors passed down through generations. Simple ingredients transform under her touch into rich, satisfying meals that are as nostalgic as they are delicious.
In true Polish style, Sebi’s Kitchen offers a variety of comforting classics, authentic European cuisine: crispy potato pancakes topped with savory mushroomy beef stew, creamy cucumber salads, and tangy beet sides that complete the meal. Zywiec beer on tap and a selection of Polish vodkas enhance the experience, adding a traditional touch to every gathering.
